How do you recommend rigging for Pompano off a pier and the surf?

You will get a different answer from each person, but here is my rig.

Tie a double dropper loop rig and attach two no. 4 Bear Paw Gold Spinner hooks. It is easy and it works.

When you have two kids fishing with you all the time simple beats complicated any day.

Try using the same rig except use gold #2 kahle hooks.

Yep, use gold hooks but also remember that pompano are sight feeders so keep your rig as simple as possible. Double drop rig, attach the hooks directly to the dropper loops and slide on a couple of orange beads as attractants. Pompano will mistake them for the egg sac of a sand fleas. Just my two cents.

Keep in mind that they have kind of tiny mouths.

A Carolina rig serves me very well.

I like to retreive it very slowly, just like you would for Flounder.

Remember, the Pomps are likely to be right in the "soup" in 1 or 2 feet of water.

I've got a friend who stands waist deep in the surf, casts onto the beach and retreives his "flea" right in the receding waves.

It really works.

What's the best hook size? Fishman mentioned a gold #2 kahle. Is there any other size that works well also? Sorry fishman, I like to get other options. No offense. Sorry for buggin'. Never fished for poms before and I really want to hook into some because they said their really good eating. Can't pass them up!

What had always been recomended to me was #4 or #6 gold hooks and I have caught plenty of pomps this way but never a keeper. This June I was using #4 Black Mustad circle hook and caught one over a pound. Go figure.....
