I'm looking for something really light weight that can handle some small "just over the breaker" type of stuff mostly targeting flounder and pompano from the beach or down at Hatteras Inlet. I'm really thinking something in the 7' range with a fairly small reel on it. I'll probably cast an ounce or less of lead on a carolina rig using some small live minnows or sand fleas.
I'd like to go to the 8' rods, but they all seem to be more bulky and heavier for what I need it to do.
Does anyone have any good recommendations?

A 6' 10 " medium power St. Croix Premier I've got a Calcutta 250 on it...350 would give you more line capacity, but a Garcia 6500C3 would fit the bill just as well and cost less. I also cast a 7' 6" Kunnan graphite competitor with a Penn 940 levelmatic on it, although I'm not sure that rod is available any more. I have used both these combos for exactly what you are describing. The St. Croix is lighter and easier to cast all day, but the old Kunnan has treated me well for a long time. just some food for thought...:) .

I use a BPS extreme 7' Med action with a Shimono Stradic 4000, I use that for pompano and flounder in the surf. I find that since it is a bass rod more or less it is very sensitive.

Jeremiah, you might want to check out some salmon rods if you want light and long. Plenty are in the 8'-9' range and rated for up to 1 or 11/2 oz lure weights. The calcutta 250 or the stradic 4000 would be a good investment. Both are somewhat expensive but you do get what you are paying for with them.
