Interesting read. For 99% of my fish I just
make a lateral cut right behind the head
and then cut right down the middle of the
fish right down to the tail...leave a small
piece still attached. Then I flip that
filet over and make one cut that takes
the skin off. 10 times faster. The only
fish I fillet the way they show is flounder.

same here easier that way takes like 1 minute to filet and skin the whole fish lol

seasalt thanks for posting that website...I have been lamenting the fact that so much fish is wasted by filleting (but who likes dealing with the bones). I am going to try the steamed fish head recipe and sauteing the backs in butter. That way I can use the whole fish and still have the fillets...

Great tip about leaving the first fillet on until the second one is done.I always hate doing that second fillet because the fish lays funny:rolleyes: . Common sense just never kicked in on that one......:D
