View Full Version : Family Feast for X-mas....

The tradition in my house is that instead of buying gifts for a bunch of folks I see only once a year, I host an Old Style Southern BBQ.

Well, today's the day, and at 0600 this morning, I loaded the smoker with a half-dozen big ol' pork butts, and another half dozen rib racks. NO baby backs here, these are full slabs, take your pick of the big or little ends....Got a couple of different sauces to pick from as well.

Toward the end, I have 10 pounds of 70/30 deer/hog sausage that will be added to the pile. This will keep the itchy fingers happy until all the stragglers show up.

To kick things off, I have 100 pounds of Apalachicola(sp?) oysters that will be steamed and dumped on a table in the back yard. Bottles of malt vinegar, Crystal Hot sauce, and Saltines, if you desire.

Side dishes are provided by the guests, the list is pretty extensive...and they're all home-made.

Gaining a few pounds, and a bad case of indigestion usually goes along with this endeavor, but it's not worthy of worry....

We'll eat about 4 this afternoon, if any of you are inclined to make a road trip...:D

Great Idea. ..well I like any idea that has BBQ, friends, and booze....

You need some good ole' North Carolina Oysters.

Some Topsails, Stump Sounds or one of my new favorites, Morehead Selects.

I knocked a few rocks the other day from behind Masonboro Island. Got a good five gallon bucket full for me and the Girl Friend. (she loves them).
Nice, and large singles and clusters. Even had a few crabs in them.

We don't get any NC oysters down this far...all ours are from the Gulf...They are good this year, though.

If I leave in the morning after work, It would take about 12 to 15 hours or so.....

Do you not get NC oysters down there? I know they sell the gulf oysers up here. It most likely has to do with the abundance of them though there though right?

besides, We have a few major sewer spills up this way here lately, still want me to bring some?:D

Now i'm wishin I would of made the trip to blackshear to see my parents. Know where sandy bottom is? Dad's got one of those smokers on wheels. Been tellin him to retire and set it up somewhere. Anyway nothin like a southern barbeque. Guess i'll miss out this year but comin up in Jan. :D
