What kind of grill do you use?

I have a Weber Genesis Silver B and a Weber Smokey Joe. Weber egg looking smoker caught my attention.

mines a borrowed $20 walmart grill, ...and it breaks at the legs if you try to move it!

I've been using the OneTouch for smoking my meats. It's large enough to do fairly evenly. But a dedicated smoker would be nice. :cool:

Good heavy duty grill and can control the temp to however low you want it.

Just picked up a Brinkman Gourmet electric smoker last month. Works for me. :D

lipyanker, what's that on the side? smoker? That's the fire pit . The heat and smoke are pulled from there to the grilling box . I can do a small pig in mine and cook it with indirect heat for a looooong ! Time ! and it is awesome .:D

Seasalt,

oldlinesides is absolutely correct the box gives you a resevouir of heat to direct into the cooking area at whatever intensity you desire with the help of vents and dampers. also i only use wood
to keep it seasoned

Lipyanker , what kind of wood do you like ? Do you experiment ? I fish from a boat alot for tuna and such in the summer and fall so I smoke alot of big bluefish , tuna , mahi , etc. I don't know what it is , but I always go back to hickory and a good brine that has brown sugar in it . Drying the fish on a rack for an hour or so after brining lets a "pellicle" or glaze form on the surface of the fish and aids in keeping the inside of the fish moist .:beer: Ever try smoked croaker ? AWESOME !:D

ol ,

I keep a variety of wood such as mesquite for fowl ,fruit like cherry apricot and nectarine woods for fish also hickory and alder for my beef and venison when smoking or grilling veggies I like wine soaked oak or maple
