OK, need some advice

I've tried a couple of spots now trying surf and dock/shore fishing and I have a couple of questions. First, what should I expect to find with this type of fisking? And second what rig and bait is a good general purpose, no specific species gear. I'm just using carolina rigs and single and double drop rigs. Curious about the fluke and flounder rigs I've seen. I tried that sand bar between IOP and SI by the rocks the other day, had a few bites but didn't land anything. Tried Palmetto Island Park today and only managed to make some very large surface. For bait I've been trying squid and shrimp...

a carolina rig and a double dropper rig will catch anything out there, it just depends on your bait. For flounder use a carolina rig and live finger mullet, mud minnows, or small menhaden. Same thing for red drum or trout, and try some live shrimp on there too. A double bottom rig with cut shrimp or bloodworms(try the fishbites) will catch spot, whiting and pompano.
