How do you guys grill fish? I have hard time grilling fish because they stick and break apart easily. It would be great to somehow "bake" the fish so it will have a crusty outer layer and moist meat...

Spray the grill w/Pam and use those grill pincher things and spray those too. Leaving the skin on one side also helps the meat stay together.

you can use aluminum foil on the grill and it will come out pretty good. As well, a lot of the juices and seasonings get trapped in the foil pouch which I love over rice and the fish. :D

If you can get a small to medium sized jelly roll pan that works real good to.

leave the scales on the filet. it holds in moister keeps the meat together and when its done the meat falls off the skin.

I use a fish grilling basket that allows you to grill a whole fish w/o sticking. I've grilled a whole 22" rock in one of these.

THIS HAS ALWAYS WORKED FOR ME AS WELL AND ALWAYS MOIST TENDER AND JUICY;) :D
take a paper towel, use vegetable oil not stuff like olive and then wipe the grill down after it gets hot. nothing will stick, and the real secret on not sticking on a grill, is to make sure that the grill is hot and not to premmie flip. let it carmelize and cook BEFORE you move the piece of meat or fish

Pam also makes a spray specifically for grilling that works pretty good.

yep.. grease your grill and your filets before putting on hot grill. You can also try to spread some button on the filet before put on the grill. Do not move the filets when they're cooked on one side.
