Villiano beach near the inlet is a decent beach spot, and almost anywhere along the beach can work, but usually if there are lots of swimmers it is not as good, best to move on.
Cut bait, shrimp, real or plastic and plastic minnows are all good, live mud minnows and mullet better, and sometimes just catching and using the sand fleas from the beach is good.

So many possibilities... Really depends on what you like.
For me I'd do some surf fishing for whiting and pompano. You can use any size rig although to get your line out far (more for pompano) you'll need a longer surf type pole. A smaller 10-14 lb rig, maybe 7-8 ft pole will work fine for close in. You'll want to fish just past the breaking waves and maybe as far as the sandbar if you can reach it. If things aren't too rough 1-2 oz of lead will hold. For bait just dig up some sand fleas or get some dead shrimp (pinch off the head and tail and discard, split the body of the shrimp in two).
Also you can fish in and around the Matanzas inlet. There you can catch redfish, flounder, trout and other fish. A couple of years ago I went to the south of the inlet along the river. There's a park. I walked around the shore tossing a plastic jerkbait. I heard some splashing as it got dark and aiming my line in that direction got me a decent slot redfish.
